To me, food is the culmination of all passions. For both chef and patron, this involves empathy, dedication, and trust. Both chef and patron must feel a hunger that needs satiating, dedicate their time to the creation and consumption of the meal, and trust in the talents, experiences, and professionalism of the chef. Few have a passion that exceeds, let alone matches, my hunger for great food. However, Aneal's has thoroughly amazed and, without a doubt, humbled me with the amount of love and compassion he invests in his craft. Run by owners who are as warm and inviting as the tropics they hail from, Aneal's challenged my assumptions of Caribbean food in North America. What had been the culinary equivalent of animal cruelty and disrespect, with all the overcooked and under/over seasoned meat, had been transformed into an appreciation and celebration of flavors and life.
